People gather early in the morning, and the first race usually begins around midday. The hill is marked for the event, and officials prepare the starting point where the cheese is released. Several races are held throughout the day, including men’s, women’s, and children’s events, making it a full festival-style gathering.
Before each race starts, a large crowd forms around the top and bottom of the hill, waiting for the signal. A local volunteer rolls or throws the cheese down the slope, and runners launch themselves after it as soon as it begins to move.
